We have discussed the suggested functionality and have already included the feature allowing creation of tasks based on e-mail subject line in the scope of future projects. So, it will extend the current functionality - creation note/task by selecting text in email body.

Regards tasks assignment to a person in Google Tasks: unfortunately, this kind of integration is not feasible in the nearest future.
